Alessandro Truzzi
Alessandro Truzzi began his journey with us as a waiter. Today, he’s our Chief Operations Manager, leading teams across multiple venues with precision, care, and vision.
Alice Perini
Alice joined us in 2011 as a section waiter at Ormeggio and today is the Training Manager for a’Mare. When a’Mare was still in its early stages, Pavoni had Alice in mind, knowing her strong background in silver service would be the perfect fit. She embodies tableside service, old-world charm, and true Italian hospitality – the very essence of what a’Mare stands for.

Victor Moya
Victor Moya joined us over 13 years ago and has grown into the Co-Owner & Executive Chef of Ormeggio at the Spit. A true master of his craft, Victor is now recognised as the Maestro of Gelato, driving our creative identity across venues.

Petra Ramkalam
Petra has been an integral part of Maestro Hospitality for the past 11 years. She began her journey as a floor supervisor at our former venue, Via Alta, and through dedication and hard work, progressed into an Assistant Manager role. From there, she transitioned into the office, where she managed accounts before stepping into her current role as Group Events Manager. Today, Petra leads our events team with passion and precision, consistently guiding them to deliver exceptional experiences.
Gianmarco Pardini
Gianmarco Pardini’s tenacity has never failed him. From his beginnings as a Chef de Partie at Ormeggio, he has risen to become the Group Executive Chef for Maestro Hospitality, leading our culinary evolution with integrity and passion.
Emily Crompton
Emily joined us as an office junior while studying accounting at university. Over the past five years, she has shown remarkable growth, drive, and determination. Today, she leads our Allambie Office team and is the go-to person across all Maestro Hospitality venues. Known for her reliability, deep knowledge, stalwart work ethic, and unwavering support, Emily's resilience and matter-of-fact approach have made her an indispensable asset to our team, and the very reason she holds the position she does today.
